One Remarkable Table: A Milestone Birthday at Catalina Rose Bay
One restaurant, one exceptionally long table and a milestone birthday that turned into a wonderful night of dining and dancing.
Our client had a clear idea for her birthday: she wanted everyone gathered at one long table.
She had booked exclusive use of Catalina Rose Bay, and the restaurant was cleared to make way for a very different dining arrangement. We created the floral design and installation for a single table that stretched through the room, bringing the whole celebration together around one striking focal point.
It was a bold change to a familiar venue. The flowers needed to work with that scale, but still feel right for Catalina’s waterfront setting and for the guests sitting around the table.

A Table That Changed the Room
With the usual restaurant layout cleared away, the long table became the organising idea for the party. Everything related to it: the line of chairs, the place settings and the flowers running through its centre.
Our floral installation carried that length through a sequence of arrangements. Together they read as one continuous composition, while each section had details for guests to enjoy at their own places.
That distinction mattered. From the room’s entrance, the table needed to make an impression. Once seated, guests would experience the flowers at a much closer scale.

White Flowers, Rich Accents and Clear Glass
The photographs show white roses and other pale blooms mixed with deeper burgundy orchids and fresh greenery. The white flowers kept the scheme light, while the darker accents gave it depth.
Clear glass vessels allowed the stems to remain visible and gave the repeated arrangements a sense of transparency. Rather than a solid wall of flowers, there were changes in height, shape and spacing along the table.
That helped a substantial installation feel comfortable within the room. It had presence, but guests could still appreciate the individual flowers, the glassware and the view beyond.

Candlelight Along the Water
Catalina’s position on Rose Bay was part of the setting throughout. In the photographs, the water sits just beyond the windows, with candles lining the ledge in front of it.
Inside, candlelight continued along the table, catching in the glass and bringing warmth to the white linen. Repeating that light around the room connected the long dining arrangement with the surrounding space.
We particularly liked how the flowers and candlelight suited the venue. The installation felt generous enough for the celebration without losing the ease of a waterfront restaurant.

From Dinner to Dancing
The party was a huge success, with plenty of dancing and a wonderful response to the flowers and the transformed room.
For us, that is the point of the design work. The finished table is only the beginning; the setting needs to become part of an enjoyable evening once everyone arrives.
Here, the single-table idea gave the birthday its distinctive character. The flowers brought that idea to life, creating a shared centre for the dinner and a warm setting for the celebration around it.

Designing a Celebration Around Your Idea
Our client’s wish for one giant table was the starting point. Our role was to develop the flowers and installation around it, paying attention to the venue, the scale of the room and the experience at each place setting.
It is a lovely example of how one clear idea can transform an event. With the right proportions and a consistent floral thread, a very long table can feel both impressive and personal.
